Banana Bread with Chocolate Chunks (gf)

This delicious (gluten and dairy-free) banana bread with chocolate chunks is loaded with healthy fats, plenty of protein, and plant-based goodness to nourish your cells, balance your blood sugar and support radiant health from the inside out. ‘Cause we all need a little healthy pleasure now and again!

Ingredients:

  • 2 ripe bananas, mashed

  • ½ cup of coconut sugar (you can also omit sugar or add monk fruit if KETO or sugar sensitive )

  • ½ cup unsweetened almond milk

  • ¼ cup unrefined organic coconut oil

  • 1 egg

  • 2 teaspoon of vanilla, organic

  • ¾ coconut flour

  • ¾ almond flour

  • 2 teaspoon baking powder

  • ½ tsp sea salt

  • 1 tsp ground cinnamon, organic

  • ¾ cup dark chocolate chunks, unsweetened

  • Optional add ins: chopped walnuts

PREP:

  1. Preheat the oven to 350. 

  2. Lightly grease a 9 by 5 loaf pan with coconut oil.

  3. In a large bowl, whisk together the bananas, coconut sugar, almond milk, coconut oil, egg and vanilla to combine. 

  4. In a separate bowl, mix together the coconut flour, almond flour, baking powder, salt and cinnamon. 

  5. Fold wet ingredients into dry ingredients and mix until completely incorporated. 

  6. Gently add in the chocolate chunks 

  7. Pour batter into the pre-oiled loaf pan and bake for about 55-60 minutes, or until toothpick inserted in center comes out clean. 

  8. Let the bread cool for 10 minutes.

  9. Invert bread onto an oven proof plate or wire rack and continue to cool.

  10. Slice and serve.
