Banana Bread with Chocolate Chunks (gf)
This delicious (gluten and dairy-free) banana bread with chocolate chunks is loaded with healthy fats, plenty of protein, and plant-based goodness to nourish your cells, balance your blood sugar and support radiant health from the inside out. ‘Cause we all need a little healthy pleasure now and again!
Ingredients:
- 2 ripe bananas, mashed 
- ½ cup of coconut sugar (you can also omit sugar if sensitive or add sugar sub) 
- ½ cup organic, unsweetened almond milk 
- ¼ cup unrefined organic coconut oil 
- 1 egg 
- 2 teaspoon of vanilla, organic 
- ¾ coconut flour 
- ¾ almond flour 
- 2 teaspoon baking powder 
- ½ tsp sea salt 
- 1 tsp ground cinnamon, organic 
- ¾ cup dark chocolate chunks, unsweetened 
- Optional add ins: chopped walnuts 
PREP:
- Preheat the oven to 350. 
- Lightly grease a 9 by 5 loaf pan with coconut oil. 
- In a large bowl, whisk together the bananas, coconut sugar, almond milk, coconut oil, egg and vanilla to combine. 
- In a separate bowl, mix together the coconut flour, almond flour, baking powder, salt and cinnamon. 
- Fold wet ingredients into dry ingredients and mix until completely incorporated. 
- Gently add in the chocolate chunks 
- Pour batter into the pre-oiled loaf pan and bake for about 55-60 minutes, or until toothpick inserted in center comes out clean. 
- Let the bread cool for 10 minutes. 
- Invert bread onto an oven proof plate or wire rack and continue to cool. 
- Slice and serve.
